Summer may taste different to everyone, but no one can resist an apricot-based cocktail to enjoy the season. Whether you are looking for a sweet and fruity drink to savour on a hot summer day or a sophisticated cocktail to impress your friends at a party, the Apricot Caipirinha is just perfect.

Apricot Caipirinha 

Ingredients:

  • 5ml Cachaca
  • 15ml sugar syrup
  • 3 apricots
  • 15ml lime juice

Instructions:

- Put the fresh apricots in a pan with water and let them soak for at least 1 hour. Add sugar and bring to a boil for 2 minutes. By boiling the apricots with syrup, you will get a sweet apricot purée that is very soft and easy to mix in drinks.

- Add lime juice, syrup and apricot purée together in a cocktail shaker. Pour over the Cachaca mixture.

- Pour the entire shaken contents into a glass with ice and lime slices. Garnish with some extra mint leaves and serve immediately.
