Basque Burnt Cheesecake

Baker Trần Quỳnh Chi from The Warm Oven CS

Trần Quỳnh Chi, a self-taught baker, is the owner of her online bakery The Warm Oven CS. Using the finest ingredients and having a reasonable price range, her bakery is one of the most popular online bakeries on Instagram in the country.

Chi has designed her own recipes, in which she reduces the amount of sugar and incorporates many Vietnamese ingredients to bring western cakes and baked goods closer to Vietnamese customers.

Basque Burnt Cheesecake

Ingredient: For a 12-cm round baking pan

- 200g cream cheese (room temperature)

- 100g whipping cream (room temperature)

- 2 eggs (room temperature)

- 40g sugar

- A pinch of salt

Preparation:

- Thoroughly mix the cream cheese with the sugar and salt

- Gradually add the eggs one at a time into the cream cheese mixture, mix thoroughly every time until fully combined

- Add the cream, mix thoroughly while being careful to prevent air bubbles

- Pour the final mixture into the mould

- Bake at 230 degrees Celsius for 30 minutes

Serving:

- After cooling, let the cake rest in the fridge for at least an hour before serving

- Basque Burnt Cheesecake can be paired with wine and fresh berries. — VNS
