Blueberry Panna Cotta
Panna Cotta is an Italian delicacy that has gained popularity worldwide thanks to its unique and irresistible flavour.

Serves: 4
Time: 3-4 hours
Ingredients:
- For the blueberry jelly: blueberries 180g, water 500ml, sugar 80g, gelatin 6g.
- For the Panna Cotta layer: fresh milk 200ml, gelatin 6g, fresh milk cream 200ml, sugar 30g, honey 10g, lemon peel.
Method:
To make the blueberry jelly:
- Cook blueberries in a pot of boiling water for about 5 minutes.
- Filter out the blueberry pulp to get 400ml of coloured water.
- Take out 50ml of coloured water, add gelatin powder and stir to dissolve. Then pour back into the remaining coloured water.
- Add sugar and stir until dissolved.
- Pour the gelatin mixture into a clean glass.
- Put in the refrigerator to cool for 1-2 hours to solidify.

To make the panna cotta mixture:
- Put 6g of gelatin in 50ml of fresh milk, stir well, then let it rest.
- Put fresh cream, sugar, honey and the remaining 150ml of fresh milk in the pot, and cook on low heat until the sugar dissolves. (Note: do not boil).
- Turn off the heat, put the milk and gelatin mixture into the pot, and stir to dissolve. Pour the mixture in the pot into the measuring cup.
- Put it in a bowl of ice-cold water or the fridge.
To complete the dessert:
- When the jelly has solidified and the panna cotta mixture has cooled, pour the panna cotta mixture into the jelly glass. Place in the fridge to chill for about 2-3 hours.
- Decorate with fruit and enjoy. VNS
