Celebrated chefs to show off at Le Meridien Saigon

HCM CITY – Celebrated chef Peter Gilmore, executive chef from two of Australia’s most exciting and dynamic restaurants in Sydney, will join a special food event Mates’ Mash-Up with Peter Gilmore to be held this Saturday at Le Meridien Saigon.

The one-night-only event will present an exciting series of chef collaborations and the latest features of chef Sam Aisbett of Akuna at Le Meridien Saigon and celebrated chef Peter Gilmore at Bennelong in the Sydney Opera House, and Quay at The Rocks in Sydney.

This is the latest in a line-up that brings together the biggest names in the world of gastronomy, including mates and mentors who have inspired Sam Aisbett on his culinary journey.

The collaboration series brings together some of Sam’s best mates and mentors from around the world, as they cook up a storm of exquisite gastronomy (and laughter) in Akuna’s open kitchen. 

Gourmets will have a chance to experience a six-course dinner crafted by the two talented chefs in their first time in Việt Nam.

Previous editions of Mates’ Mash-Up have featured internationally acclaimed names such as Rishi Naleendra of Cloudstreet and Sun Kim of Meta from Singapore.  

Sam spent many years working at Quay in Sydney, the iconic modern Australian restaurant headed by Peter Gilmore, where he worked his way up to become their first head chef.

Quay has earned several awards during his tenure, including Three Hats in The Sydney Morning Herald Good Food Guide as well as placements on the World's 50 Best Restaurants list.

In six months since its opening last July, Akuna was awarded New Opening of the Year by LaListe, the ultimate guide to the world’s best restaurants. It was also recognised among the Top 25 Restaurants by Robb Report Gourmet Collection 2023. VNS
