Chicken skewers with lime leaves

Serves: 6

Ingredients:

- Chicken legs: 1.2kg
- Shallots: 150g

- Lime leaves: 50 leaves

- Fish sauce: 4tsp

- Fresh turmeric root: 30g

- Lime juice: 30ml

- Salt & pepper to taste

 Method:

- Remove bones from chicken legs and cut into bite-size pieces
- Finely chop the shallots, and julienne the 12 lime leaves

- Peel the turmeric, coarsely cut them into pieces, blend it with some water and lime juice, strain through a sieve to keep the liquid

- Marinate the chicken with fish sauce, pepper, turmeric juice, shallots and julienne lime leaves for 15 minutes then add a tablespoon of cooking oil, marinate for at least 30min more

- Roll one piece of chicken in one lime leaf, skewer on a bamboo stick then grill on charcoal

- Serve hot with steamed rice, with a dipping sauce of fish sauce and lime juice. VNS
