Grilled salmon with passion fruit sauce and tomato salsa

Grilled salmon with passion fruit sauce and tomato salsa

Ingredients:

  • Fresh salmon fillet: 150g
  • Passion fruit: 30g
  • Honey: 5ml
  • Onion: 20g
  • Black olive: 10g
  • Cherry tomato: 30g
  • Garlic: 1 clove
  • Olive oil: 5ml
  • Dill: 5g
  • Parsley: 3g
  • Black peppercorn: 10g
  • Butter anchor: 10g
  • Zucchini: 50g
  • Shallot: 5g
  • White wine: 20ml
  • Tabasco: 3ml
  • Tomato ketchup: 10ml

Preparation:

  • Rinse the salmon and use paper to dry
  • Marinate salmon with olive oil, salt, and pepper
  • Wash vegetables. Dice vegetables into small cubes including tomatoes, onions, olives and garlic.
  • Chop the dill, lemon peel (grated), and parsley. Mix them all together with olive oil, salt and pepper, tabasco, and ketchup. Leave them to rest for 15 minutes.
  • Green zucchini: grate into thin slices and soak in orange juice for 5 minutes
  • Make the sauce: chop the shallots, then cook with white wine until there is no wine left. Add passion fruit juice without the seeds, and a little fresh cream, and a little honey if it is too sour.
  • Grill the fish at 170 degrees Celsius for about 3 minutes. How the fish is cooked is down to your liking.

Presentation:

  • Roll the zucchini into a round shape and put the mixture of vegetables into the zucchini you have just created.
  • Place the fish on a plate, add the sauce, and decorate with dill.
