Executive Chef Zack Trương from Pan Pacific Hanoi
Ingredients:
- 1kg pork ribs
- Bunch of coriander
- 2tbsp of pepper seeds
- 1 bulb of onion
- 1 tuber of white radish
- 2 sprigs of fresh thyme
- 1tbsp of salt
- 5tbsp of fish sauce
- 2tbsp of lime juice
- 50gr chilli

Preparation:
Prepare the ingredients: Peel and chop the onion into small squares about 1cm in size. Peel, wash, and cut the white radish into pieces of your preferred size.
Simmer the broth: Fill a pot with water and place it on the stovetop over high heat. Add chopped cilantro root, pepper, onion, and white radish pieces. Add 1tbsp of salt and stir everything well to combine. Bring the pot to a boil. Once boiling, carefully add the ribs to the pot. Reduce heat to medium-low and simmer for about 1 hour, or until the ribs are tender. Once cooked, remove the ribs from the pot and set them aside. Reserve the broth for later use.
Mix the sauce: Combine 200ml of meat broth, 5tbsp of fish sauce, and 2tbsp of lime juice. Stir in your favourite chilli peppers (sliced or chopped), along with thinly sliced red peppers, onions, and fresh coriander. Bring the mixture to a simmer over medium heat, stirring occasionally, until fragrant and the flavours meld together, about 5 minutes.
Ready to serve: Arrange the cooked ribs on a large serving platter. Spoon the flavourful broth generously over the ribs, ensuring they're well coated.
