Ngô Nữ Như Nhi, an amateur cook, turned 10kg of pink limes into a sweet syrup that she gifted to her friends in little bottles. You can prepare this beverage at home if you follow her instructions.
Home cook Ngô Nữ Như Nhi
Ingredients:
Pink lime: 10 kg
Honey: 10 litres
Rock sugar: 2 kg
Small glass jars to soak the syrup mixture
Preparation:
Fill the glass jars with hot water and give them a good rinse.
Pick limes that are ripe, with thin skins and lots of juice.
After a thorough cleaning, soak the limes in salt for 30 minutes.
Take out the limes and let them dry.
Cut the limes into thin slices and put them into glass jars.
Each layer of lime will be followed by a layer of sugar until the jar is filled.
Finally, add the honey, seal the lid, and wait for the sugar to dissolve.
Pink lime syrup
Note: If you notice bubbles forming on the top of the soaking jar, scrape them off. It's important to remember to open the jar a few times during the steeping process since the pressurised gas produced by the fermenting limes might burst in an explosion if allowed to build up too much.
For the syrup to be ready, it can take as long as seven days to soak.
Depending on your taste, you can use the lime syrup with ice or dilute it with warm water. VNS
