HCM CITY – Acclaimed Michelin-star French chef Nicolas Isnard is back in HCM City to present an exclusive menu encompassing a range of his exquisite and ingenious creations.

With an epicurean approach, respect for the ingredients and a fresh cooking philosophy, chef Isnard’s signature creations include “French Seared Foie Gras, Beetroot and Raspberry, Hibiscus Scent”, “Phu Quoc Baby Calamari, Zucchini Caviar, Ginger & Thai Basil Broth”, “Slow-Cooked Iberico Pork, Carrot, Coriander and Citrus condiment” followed by “Contemporary Onion Soup”, and “Caramelised Baby Banana with Lime, Mango Sorbet, Lemon Tea Jelly”.

Chef Isnard’s culinary roots can be traced back to his childhood, when he acquired a taste for cooking from his Italian grandmother. At the age of 22, he became the Chef de Partie for Relais & Chateau at its one-star Michelin restaurant called Le Prieure. He currently co-owns the L’Auberge de la Charme restaurant in France, which earned a Michelin star in 2009, just a year after he and his three partners began operation. The restaurant was also awarded three Gault & Millau toques.

His cuisine combines tradition and innovation, mixing distinctive rustic flavours with provincial produce in the presentation of classic French dishes. His innovative style has conquered the palates of connoisseurs worldwide, including in Beijing, Dubai, Moscow, Abu Dhabi, Singapore, HCM City, Casablanca, Manila, Jakarta, Kuala Lumpur and Macau.

Gourmands can opt for his full dinner menu paired with fine wine at Social Club Restaurant located on the 23rd floor of Hotel des Arts Saigon over three days, from September 6 to 8. Price is VND2,688,000++ per guest. — VNS
