Hoi An Shredded Chicken and Local Herb Salad is a specialty from the northern province of Quang Nam. The dish is a combination of delicious, crispy chicken with the spicy flavours of onion and pepper, characteristic of Central Vietnam. Ingredients: serves 1
500g chicken drumstick
100g onion
A bunch of Vietnamese mint
A bunch of spearmint
100g sliced green papaya
50g sliced carrot
300ml coconut water
5g fresh turmeric
10g Hoi An hot sauce
30g kumquat
50g fried peanuts
50g fried onion
Salt, pepper, sugar to taste
Method:
- Season chicken drumstick with turmeric and salt. To keep the meat crispy, put the chicken into cold water and heat until the water boils. Remove the drumstick from the water and soak it in coconut water for 5 minutes. Reboil the chicken stock, turn off the stove and soak the drumstick for 5-10 minutes.
- Slice the onion and soak it in ice cold water. Once chilled, mix with green papaya, carrot, and shredded chicken meat.
- Mix the salad with kumquat juice, sugar and hot sauce. Season with Vietnamese mint and spearmint. Sprinkle the crushed fried peanut and fried onion over the dish.
You can serve this dish with grilled sesame girdle cake to make it even tastier. Home Hoi An Restaurant’s Chef recommends some crushed black pepper to top it all off.
