Ozouni is a special soup that you eat in the morning on Lunar New Year’s Day in Japan. It contains Mochi (rice cake). For the approaching Tet in Viet Nam, let’s make some and hope the dish will bring good luck for a year. Have a very happy Lunar New Year!
Ingredients: serves 4
3 cups Dashi (cooking stock)
1/2 cup Daikon radish, thin and skinny slices
1/2 cup carrot, thin and skinny slices
8 slices Amaboko (fish cake)
1 tsp soy sauce
1 tsp Sake
1/4-1/2 tsp salt
8 Mochi (Japanese rice cake)
4 Mitsuba (hornwort), coarsely chopped

Method:
- Heat Dashi in a pot at medium temperature and add Daikon radish, carrot and Kamaboko, and cook until vegetables become tender.
- Meanwhile, bake Mochi in a toaster oven for about 5min until it has expanded and browned.
- Season soup with soy sauce, Sake, and salt.
- In a soup bowl, place the baked Mochi and pour hot soup, then sprinkle with Mitsuba.
