Several AccorHotels in Việt Nam have joined actively the global Planet 21 sustainable development programme initiated by the multinational hotel group. The hotels have committed to developing urban farming and to planting vegetable gardens by 2020.

At Pullman Saigon Centre, the space behind Food Connexion restaurant was transformed into an organic herb garden where guests are invited to scissor bits of the fragrant plants to spice up their meal.

Sofitel Saigon Plaza has turned its Mezz restaurant into in a local organic farmers market using organic and bio-ingredients from local suppliers to create Vietnamese recipes with French touches. The restaurant motif emphasises recycled materials such as wooden wine crates.

Ibis Saigon South and Hotel des Arts Saigon MGallery Collection have also planted herb gardens in their backyards where the harvest is enjoyed by diners.

All AccorHotels in central Việt Nam, including Hotel Royal Hoi An – MGallery by Sofitel, Grand Mercure Danang, Pullman Danang, Premier Village Danang, Mercure Hoi An and Mercure Bana Hills French Village, have joined forces to create a green market where guests can purchase fresh produce from local farmers in the region, as well as taste and purchase bio-wines and handicrafts.

Meanwhile, staff members from hotels in the North, including Sofitel Legend Metropole Hanoi, Pullman Hanoi, Hotel de l’Opera, MGallery, Novotel Suites Hanoi, Mercure Hanoi La Gare and Ciputra Club Hanoi, are working with Me Linh Biodiversity Centre to cultivate and manage vegetable gardens.

In addition, nearly 40 hotels in 13 countries, including Việt Nam are already using connected solutions to fight food waste in their kitchens and restaurants. Pullman Saigon Centre sends the leftover food from buffets to Green Bamboo Warm Shelter, a centre for homeless children and disadvantaged teenagers in HCM City.

This year, the AccorHotels’s “Planet 21 Day”, has seen mobilization around the theme of food & beverage. The hotels are invited to highlight their greatest achievements in three categories: the fight against food waste, the creation of an urban vegetable garden and the offer of healthy, local food and drink. — VNS
