Dragon fruit breakfast smoothies with homemade granola

The Dragon Fruit Breakfast Smoothie is a vibrant, light, and delicate breakfast dish, a healthy option to start your day since it is nutrient-packed. The dish has a perfect combination between the creaminess of the smoothie and crunchiness from the granola bars. In the instructions below, chef Komang will guide you on how to make the Protein Granola Bar from scratch and then combine it into this healthy breakfast bowl.

Refreshing dragon fruit smoothie bowl with crunchy granola

Protein Granola Bars

Ingredients (10 bars)

- 2 cups gluten free quick oats

- 1/2 cup vanilla protein powder

- 2 tbsp ground flax meal

- 1 tsp cinnamon powder

- 1/4 cup unsalted and unsweetened peanut butter

- 1/4 cup honey

- 1 tsp vanilla extract

- 1/2 unsweetened almond milk

- 1/4 tsp salt

- 1/3 cup mini chocolate chips plus more for the drizzle

Instructions

- Line an 8-inch by 8-inch baking tray with parchment paper and preheat the oven to 350°F or 180°C

- In a large mixing bowl, combine the quick oats, protein powder, ground flax, cinnamon and salt. These will be the dry ingredients

- In another bowl, combine the nut butter, honey, milk and vanilla extract, then mix until fully combined, then add the wet ingredients into the dry ingredients, mix thoroughly, then fold in the chocolate chips

- Spread the mixture evenly onto the prepared baking tray, then press firmly down into the pan

- Bake for 18 minutes or until golden brown

- Remove the tray from the oven and cool at room temperature for 20 minutes or until cool to touch 

- Melt 2 to 3 tbsp of chocolate chips in the microwave. Once the bars are cooled, drizzle on top the melted chocolate and slice into 10 bars.

Dragon Fruit Smoothie Bowls 

Ingredients (2 servings)

- 2 packets of frozen dragon fruit

- 1/2 cup of frozen raspberries or other fruit of choice

- 2 medium ripe bananas (peeled, sliced, and frozen)

- 3 tbsp (vegan) vanilla protein powder

- 1/4 to 1/2 cup of regular/non-dairy milk or water

- 1 protein granola bar

Optional toppings can be coconut flakes, fresh fruits, hemp or chia seed.

Instructions

- To a high-speed blender, add frozen dragon fruit, frozen raspberries, banana, protein powder, and gradually add milk or water (starting with a small amount and adjust on the go)

- Blend until creamy and smooth. The trick to a thick smoothie bowl is being patient and blending slowly, adding only as much liquid as necessary, and using a smoothie wand (or something comparable that is blender safe) to scrape the sides down as it blends

- Taste and adjust flavour as needed, adding more banana for more sweetness, milk for more creaminess, or berries for a more intense berry flavour

- Divide the smoothie into two servings, top with fruits, crumbled granola bars, hemp or chia seed, and/or coconut flakes according to one’s liking.

Serve

- Dragon Fruit Smoothie is best consumed when freshly made

- The leftover smoothie can be refrigerated for up to 24 hours, frozen for longer-term storage, or put into ice trays and frozen for future smoothies. VNS
