Hainanese chicken rice is a dish of poached chicken and seasoned rice, served with chilli sauce and usually comes with cucumber garnishes. It was created by immigrants from Hainan province in southern China and adapted from the Hainanese dish Wenchang chicken. It is considered one of the national dishes of Singapore and is most commonly associated with Singaporean cuisine but is also seen throughout Southeast Asia, particularly Malaysia where it is a culinary staple.

Step 1: Make the Soya sauce
- Light soya sauce: 300 gram
- White sugar: 100 gram
- Sesame oil: 50 gram
- Mix all together to make the sauce.

Step 2: Boil Chicken
After washing the chicken carefully, boil it for 20 minutes. Then, immediately lift and transfer the chicken into a bath of ice water for 10 minutes to cool. Don't forget to reserve the poaching broth for your rice and the accompanying soup. Take out the bone and cut the chicken into bite-sized pieces and serve on dish. Drizzle soya sauce on top.
Step 3: Cook Hainanese Rice
Ingredients:
- Cloves garlic: 50 gram
- Onion: 50 gram
- Ginger: 50 gram
- Chives: 02 leaves
- Chicken fat: 50 gram
- Rice: 1 kg
Instructions:
Mix all ingredients together and sauté it all in a pot until it smells good.
Clean the rice, put the mixture above on top then cook the rice with chicken broth.
Part 4: Soup for the rice
Add in salt and chicken stock powder into the chicken broth; simmer with cabbage and bean-curd for 10 minutes.
Part 5: Chilli sauce for Hainanese chicken rice
- Finger-length red chilli: 300 gram
- Fresh ginger: 100 gram
- Cloves garlic: 50 gram
- Vinegar: 150 gram
- Lime juice: 100 gram
- Blend everything in a blender to a smooth paste
Ready to serve: Serve rice, chicken, soup and chilli sauce into portions
