Ingredients:
- 6 dried plums
- 4 kumquats, halved
- 10ml sugar syrup
- Ice cubes
- Soda

Preparation:
- Place 6 whole dried plums in a cocktail shaker then pour in 10ml of sugar syrup and the juice of the four kumquats.
- Fill the shaker or jar with ice cubes. Cover the shaker or jar tightly and shake vigorously for about 15 seconds to combine the ingredients and chill the drink.
- Strain the mixture into a chilled cocktail glass, discarding the ice and kumquat solids.
- Garnish the rim of the glass with a slice of kumquat for a decorative touch, then fill the glass with soda.
- Savour the refreshing and tangy flavours of the drink. The combination of kumquat sweetness, soda fizz, and a hint of sugar syrup makes for a delightful and invigorating beverage.
