Michelin-starred sushi chef introduces Japanese dining tradition to HN

Michelin-starred sushi chef Toshihide Terado

HÀ NỘI — Connoiseurs in Hà Nội will have chance to experience ‘Omakase’ – a form of traditional Japanese dining when Michelin-starred sushi chef Toshihide Terado is in the city to showcase the art of dining.

Literally means it means "I leave it up to you", ‘Omakase’ is a Japanese fine tradition in which guests leave themselves in the hands of a chef and then receive a seasonal and artistic meal which uses the finest ingredients available. The tradition aims to give the chef creative freedom and diners a memorable dining experience.

What will appear on the plate is decided by the chef at the moment he is standing at his sushi counter in front of his guests. The food he serves is typically driven by the ingredients available to him, which have been selected based on their quality and seasonality. Dining omakase, diners will be face-to-face with the chef to contemplate his “performance”. The chef will also talk about his food creations to make sure his guests have the best dining experience.

In Hà Nội, chef Terado will present the best sushi during the ‘Omakase’ which will take place from November 21 until 24, and on November 26, at Azabu Restaurant, Hôtel du Parc Hanoi.

Having worked for six years as Executive Chef at the Michelin-starred Sushi Azabu in New York, chef Terado currently heads the kitchen in its Kuala Lumpur branch.
